Easy Cajun Chicken Pasta

Everyone needs a quick meal to throw together on weeknights! This cajun chicken pasta is my go-to for nights when my guys have band practice, church, or any other activities. It has lots of flavor with cajun spices and a short cut alfredo sauce. Hope y’all enjoy this simple weeknight meal!

Easy Cajun Chicken Pasta

Ingredients:

  • Onion – 1 whole, cubed
  • Bell Pepper – chopped
  • Frozen Chicken Tenders, 1 bag, thawed
  • Cajun Seasoning – 2 tsp. (I LOVE Wildman’s cajun blend!)
  • Red Pepper Flakes – 1/4 tsp. (more if you like it spicy!)
  • Cream Cheese – 1 block
  • Sour Cream – 1 cup
  • Parmesan Cheese – 1 cup
  • Pasta Water – (just before you drain the pasta, reserve 1 cup of the pasta water)
  • Pasta – I like rigatoni or something similar

Optional Add-Ins:

I sauteed 1 bag of frozen broccoli, 1 cup frozen peas and some chopped onion in a separate pan. Then I added it to the cajun chicken pasta at the end. It was DELISH, but of course, it is optional.

Directions for Easy Cajun Chicken Pasta:

Cooking the Chicken:

First of all, I almost never remember to thaw meat for dinner. If you are like me, dump a bag of frozen chicken tenders into a colander placed in a large bowl in the sink. Cover the chicken with hot water. It will thaw while you prepare the rest of the ingredients.

Also, fill a large pot with water and get it boiling for the pasta. Once it’s boiling, add your pasta along with 1 tsp. of salt.

Next, chop one onion and one bell pepper. Saute the chopped veggies in 1 TBSP of butter in a large pan. Allow them to soften a bit. Next you will need to drain the chicken and add it to the pan. Add 1 teaspoon of cajun spice to the chicken and cover with a lid.

Alfredo Sauce Hack! 

Once the chicken is cooked through, add 1 block of cream cheese. Place the lid back on the pan and allow the cream cheese to melt. Once it has melted, turn off the flame. Next, add 1 cup sour cream, 1 cup parmesan, and 1 cup pasta water.

Depending on how much spice you prefer, you can add 1 more teaspoon of cajun spice and the red pepper flakes. Stir everything together until fully incorporated. Dump in the drained pasta and stir again. 

Lastly, garnish with green onions or fresh cut parsley, and enjoy!
