The weather is finally cooling off here in Ohio. These pan fried pork chops with apples make a delicious autumn meal for the family!
I went to the grocery store and bought a family package of mixed pork chops. There was about three pounds of pork chops for less than six dollars. We had just picked apples, and I thought, well this will be delicious together! This recipe is so delicious and is easily prepared in one pan!
Pan Fried Pork Chops with Apples:
Mixed Pork Chops, about three pounds
1 cup all purpose King Arthur flour
1 teaspoon celery salt- 1/2 teaspoon celery seed, and 1/2 teaspoon sea salt pounded together in mortar and pestle
1 1/2 teaspoons salt
1 teaspoon ground black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon thyme
a small bunch of fresh sage
1 cooking apple cored and sliced
2 onions chopped
1/2 cup butter, lard, or refined coconut oil
1 cup white wine
2 cups chicken stock
First, preheat oven to 350 degrees. Next, add the flour to a large plate or shallow dish. Then mix in all the dry spices and salt and pepper. Dredge your pork chops in the seasoned flour and set a side. Take a heavy bottomed skillet and add half of the fat. Melt the fat until it gets very hot, and then add the pork chops, frying them until golden brown. Set them aside, and add the rest of the fat and melt it. Add the onions and apples, saute until softened. Add salt and pepper if needed. Now add the chopped fresh sage, saute, and then deglaze the pan with the white wine. Next, add the stock. Replace the pork chops back into the pan with the sauce. Lastly, you will place the lid on the pan and put it in the oven for an hour.
