Chicken Biscuit Pot Pie

My solution to the wackiest winter weather I have experienced in recent memory, is to make chicken biscuit pot pie. With all these rainy, wet, cold, and dreary days, I decided we definitely needed some comfort food!

Honestly, I have never seen such bipolar behavior in the atmosphere. It’s like, ok weather, get some meds already!

Two weeks ago we had lows in the teens, which always sends everyone in the south country into mass hysteria. Every time it dips below freezing, the local news people tell everyone to check on the elderly and bring in all the pets and plants…and livestock. Even after all the years I have lived in Louisiana, the yankee inside me still just has to laugh!!!!

The week after our “winter vortex” that lasted three whole days, the temperature soared to a record breaking 80 degrees, followed by a warm, muggy mess of a week.

The last week has been rainy every day…but at least it has been consistent.

The funny thing is, we almost never eat chicken pot pie. All the men in my house have an aversion to vegetables, and I guess I gave up a long time ago trying to force them into eating them. But I discovered that something magical happens when you cover them in béchamel and top them off with home made biscuits! All my guys loved this warm, comforting meal and I think I found a sneaky way to get in some more veggies!

Here’s a recipe to get cozy on the cold swing of this yo-yo winter weather pattern we are having!

Chicken Biscuit Pot Pie

1 bag of Chicken Breast Tenderloins

Veggies – You can buy the bag of frozen veggie medley or use whatever you have. I diced onion, celery, sweet potatoes, and carrots, then added frozen green beans and peas.

Throw all your veggies in a large pan along with the Chicken breast tenderloins. Add salt, pepper, garlic powder, thyme and 2 bay leaves.

While your chicken and veggies are cooking, you can make your béchamel. You can find out how to make that here.

Set your béchamel to the side and prepare your biscuits. You can find that recipe here.

Once your chicken and vegetables are cooked through, all you have to do is assemble!

I poured the chicken and veggies into a large casserole (which I purchased on Small Business Saturday) then cover them with the béchamel sauce. Next, prepare the biscuits as directed and place on the top of your chicken/veg/béchamel mixture.

Place pan in a 400* oven and bake for 30 minutes.
